Lighter Pumpkin Bread

It’s offically pumpkin season & I really go cray for anything pumpkin! Pumpkin bread is my all time favorite though and since I am trying to cut calories this year I opted for a lighter verison than my normal recipe. Making a few changes on the flour, oil and eggs can make a big difference. Hope you guys enjoy!

  • 1 cup(s) (packed) light brown sugar
  • 2 large egg whites
  • 1 cup(s) pure pumpkin (not pumpkin pie mix)
  • 1/4 cup(s) coconut oil
  • 1/3 cup(s) low-fat plain yogurt
  • 1 teaspoon(s) vanilla extract
  • 1 -3/4 cup(s) whole wheat flour
  • 1 1/2 teaspoon(s) baking powder
  • 1 teaspoon(s) ground cinnamon
  • 1/2 teaspoon(s) ground nutmeg
  • 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1/3 cup of pecans or walnuts


  • Preheat oven to 350 degrees F. Spray 8 1/2″ by 4 1/2″ metal loaf pan with nonstick cooking spray with flour.
  • In large bowl, with wire whisk, combine brown sugar and egg whites. Add pumpkin, oil, yogurt, and vanilla extract; stir to combine.
  • In medium bowl, combine all-purpose flour, whole wheat flour, baking powder, cinnamon, nutmeg, baking soda, and salt. Add flour mixture to pumpkin mixture; stir until just combined. Do not overmix.
  • Pour batter into prepared pan. Top with pecans or walnutes. Bake 45 to 50 minutes or until toothpick inserted in center of loaf comes out clean. Cool in pan 10 minutes. Invert pumpkin bread onto wire rack; cool completely.



1 tazas (embalado) de azúcar moreno ligero

2 claras de huevo grande 1 tazas pura calabaza (mezcla de pastel de calabaza no)

1/4 tazas aceite de coco

1/3 tazas yogur bajo en grasa

1 teaspoon(s) de extracto de vainilla

1 -3/4 tazas de trigo harina

1 1/2 teaspoon(s) polvo de hornear

1 teaspoon(s) tierra canela

1/2 teaspoon(s) suelo nuez moscada

1/2 teaspoon(s) bicarbonato de sodio

1/2 teaspoon(s) sal

1/3 taza de pecanas o nueces


Precaliente el horno a 350 grados F. Spray 8 1/2″ por 4 1/2″ metal pan pan con aceite antiadherente en aerosol con harina. En un tazón grande, con un batidor, combinar azúcar y claras de huevo. Agregar la calabaza, el aceite, yogur y Extracto de vainilla; Revuelva para combinar. En un tazón mediano, combine la harina, harina de trigo integral, polvo de hornear, canela, nuez moscada, bicarbonato de sodio y sal. Agregue la mezcla de harina a la mezcla de calabaza; mezclar sólo hasta combinar. No mezcle demasiado. Verter la mezcla en el molde que preparaste. Cubra con las nueces o walnutes. Hornear de 45 a 50 minutos o hasta que al inserta un palillo en el centro del pan salga limpio.
